From the Polenta served with wild mushroom, mascarpone cheese and white truffle oil to the handmade Cavatelli simply prepared with organic cherry tomatoes, olive oil garlic and basil, you taste the freshness in every bite of our dishes. “I try to use as many local and organic ingredients as I can find,” says owner and Executive chef, Joao “Juca” Oliveira. “I feel you can taste the difference.”
We pride ourselves in making our own pastas daily in our pasta factory located right outside the Island. Our breads, pizza dough and desserts are also prepared daily in-house.
We cook our pizzas and many of our entrees in our firewood-burning oven giving our dishes a truly special and authentic taste! From the Branzino in cape-butter, white wine lemon and parsley to the traditional Lasagna made with ground tenderloin, porcini mushrooms, and fresh mozzarella the firewood-burning oven really adds to the depth of flavor.
